Some simple snack prepping for the week. Banana oatmeal muffins and they tasted great. Very simple recipe that my wife had first discovered by Debbie Reichert who has a page on Pinterest. I decided to give the recipe a go so I could have some easy to grab snacks throughout the week. Bananas,oatmeal, plain greek yoghurt and honey were the main ingredients for this. Can be a quick on the go breakfast option or mid morning or afternoon snack.
Ingredients:
2.5 cups of old fashioned oats
1 cup of plain Greek yoghurt
1/2 cup of honey
2 eggs
2 tsp of baking powder
1 tsp of baking soda
2 tbsp of ground flax
1 tsp of vanilla
2 ripe bananas
Instructions:
1. Preheat oven to 350 degrees. Prepare muffin tin with 12 silicone or foil liners.
2. Place oats in food processor and pulse for about 10 seconds. Add remaining ingredients to the food processor.
3. Process till everything is mixed together and oats are smooth.
4. Optional: At this point I divided the batter mix and put raisins and chocolate chips in each batch.
Fill the muffin liners with the batter and bake for 18-20min, check consistency of muffins with a tooth pick. You will know when baked as tooth pick should come out clean.
Leave to cool on a wire rack for a few mins or so before you dive in. Enjoy
